Well, the baby started crawling a few weeks ago and I suddenly find myself with a lot less time to get things done. Man, they move quick! I’ve had to change most of my routine as a result. Just when I thought I had it all figured out too (rookie mistake, I know). Since the weather is finally warming up, smoothies are making the rounds again for breakfast or afternoon snacks. Bonus, I can put one together while holding the baby and she loves the sound of the blender.
This smoothie can be made 100% plant-based, depending on the milk you choose, and provides a much needed boost of energy, vitamins and minerals to this tired mama. The recipe is high in iron from the hemp hearts and spinach, and the mango provides some vitamin C to help with absorption (as plant-based iron is not absorbed as well as animal sources of iron). You can use fresh or frozen ingredients – lately mangoes have been on sale here, but I still use the frozen (they’re already cut up). Sometimes I add some soft tofu (for extra iron and to thicken) and share with the baby. The recipe uses a full ripe banana for sweetness, but if you find it’s not enough, add a bit of maple syrup or chopped up dates to sweeten it to your liking.

Spinach Mango Smoothie
Ingredients
- 1 cup milk of choice
- 1 ripe banana medium
- 1/2 cup mango chunks fresh or frozen
- 2 cups fresh spinach (or 1 cup frozen)
- 2 tbsp hemp hearts
Instructions
- Place all ingredients in blender and blend until smooth.
Notes
- If you choose to substitute almond, cashew, or other non-dairy milk (other than soy) I recommend increasing the hemp hearts to 3 tablespoons to replace the protein.
